How about a trip to Ecuador Central Highlands

North central Ecuador is a land of mountains, volcanos, deep valleys and gorges and the country’s capital, Quito. One of the worlds most active volcanos, Cotopaxi, lies not far from the city itself and is in a region of a large number of other volcanos and high Andean peaks. Quito is one of the oldest known capital cities in the world and has a rich and well documented history dating back many hundreds of years, but chiefly from the time of the Spanish conquest and the Incan Empire before that. This is an area which is difficult terrain to make your way across, not only owing to the rocky, rugged and difficult conditions underfoot, but the continuous altitude means both humans and internal combustion engines perform less well… but if you’re up to the challenge, its a wonderous place to explore
